I was doing fine with my summer running when my vacation forced me into several off days and I only got 25 and 32 miles done each week. I was supposed to be over 40 now, would it be okay if I started back up at 45?

umm...that is almost 25%. If you REALLY wanted to get up to 45 miles, you would have gotten up 25 minutes earlier every morning and got it done. Just pick back up at 35, then go 40, and then 45. You will only be losing 15 miles total from your whole summer mileage.
